
Minestrone Soup
Minestrone soup is an italian vegetable soup made with pasta and tomato.
Ingredients
- 4 tablespoons vegetable oil
- 1 piece onion
- 2 pieces carrots
- 2 pieces celery
- ¼ cup tomato paste
- 2 cups vegetables potatoes, zucchini
- 4 cloves garlic
- ½ teaspoon oregano
- ½ teaspoon thyme
- 1 cup tomatoes
- 4 cups broth
- 2 cups water
- 1 teaspoon salt
- 10 mg leaves
- 1 cup pasta
- 1 cup beans
- 2 cups baby spinach
- 2 teaspoons lemon juice
Instructions
- In a frying pan put 3 tablespoons of vegetable oil and fry the finely chopped onion, carrots,celery, tomato paste and salt.
- Add the seasonal veggies, garlic, oregano, and thyme.
- Add the chopped tomatoes, their juices, broth, and water. Mix the salt, bay leaves, and red pepper flakes in a bowl.
- After 15 minutes of boiling add pasta, beans and greens.
- Continue to mix for about 20 minutes until the pasta is ready.
- Get rid of the bay leaves after removing the saucepan from the heat. Add the lemon juice and the remaining tablespoon of vegetable oil.
